Chastity device plus biking sounds like a difficult combination. You're likely going to be saddle sore, even without a device, and I think the device is going to foster some chafing.

I dunno about your dynamic, but if you and she are going to be biking together, you might investigate being able to remove the device for exercise (and, of course, being put right back in afterwards).
